A soothing and creamy vegan cauliflower soup recipe



Sometimes you want your dinner to be just as warming and calming as a hug – and if there’s one food that always is, it’s chowder. But while most depend on the inclusion of seafood, this recipe is from Danny Seo’s latest cookbook Of course, delicious dinners is completely vegan and gluten-free.

“Talk about the perfect large stock pot for a snowy day,” writes Seo. “This is a creamy, dairy-free chowder. It’s the oatmeal that gives it that thick, creamy texture.” If you don’t have oatmeal, having oatmeal comes in handy enough DIY: just put them in a blender or food processor until they become a flour texture.

In addition to the chowder recipe itself, Seo also offers instructions for tasty toppings to add texture to the dish: some crispy potatoes and a gremolata. The latter is an Italian spice made from chopped green citrus herbs, sometimes with different flavors (this one includes olives for saltiness, for example). “Good to know: Avoid bitter undertones when preparing the gremolata by being careful not to use the pulp of the lemon,” advises Seo.

While his side dishes sound divine, you can always grab a slice of fresh homemade bread or another topping or just enjoy this slightly cheesy (thanks to nutritional yeast) stew alone.
