    Having a lid on your wok isn’t strictly necessary, but if versatility is a concern, you can opt for a rounded lid to create high levels of steam, to heat noodles, or to cook your chicken completely. A glass lid lets you peek inside to see how your meal arrives, and it can be fitted with ventilation to vent moisture and keep your wok from bubbling over.

    The luxurious Samuel Groves non-stick stainless steel wok is a treat as soon as you take it out of its woven fabric bag. It’s oven safe to 250 degrees, but you’ll need to hand wash it to keep the non-stick coating intact.

    It’s a top notch choice, and the three-ply stainless steel is a little heavy if you’re planning on tossing your stir-fries. However, this makes it very sturdy and the riveted handle allows you to keep your distance from the action. However, since it is metal, it heats up when you use it. So be careful not to hold the handle too close to the rivets while cooking.

    It is technically ovenproof, but only up to 160 degrees. Because it has a wider bottom and steep sides, it can easily be used as a sauté pan or even a frying pan for multitasking in the kitchen.

    We enjoyed the Salter Megastone range in reviewing saucepans and the Megastone wok is no exception. The range consists of a rough non-stick coating that is tough enough, and the handles are plastic coated so they don’t get too hot when in use.     At an impressive price, Judge’s 35 cm non-stick wok set is packed with value. It’s made of classic Chinese carbon steel and comes with loads of accessories to keep you busy. This includes a serving coaster, a punched grid, a turner, chopsticks and a lid. The lid is domed and is reminiscent of more traditional woks.

    You cannot use it on induction hobs and the handles are coated with a cool coating. Although it’s oven safe (aside from the wood extras) it can only get up to 150 degrees, so be careful.

    How we tested the best woks

    When testing, we thought about how quickly the wok heats up and how evenly. After all, when cooking with a wok one is usually in a hurry to cook a quick and healthy dinner.

    Another factor that we took seriously was the material that was used in the construction. Carbon steel is the material of choice for most chefs, but these woks are becoming increasingly difficult to mass-market and have been replaced with a durable non-stick coating designed to mimic their lightweight design. However, you cannot season your non-stick coating as any residue will be washed away after cooking.

    The balance of the wok was a big factor because it should be able to support itself if left on the hob. The handle should also be sturdy enough to turn the wok over while cooking without the bowl becoming too heavy.
