Vegan Baked Apple Donuts

Veganize the fall classic donut with this baked recipe from the Orchids + Sweet Tea to blog. You can use your favorite store-bought cider in this recipe to give the donuts an irresistible fall flavor.

What you need:

For the donuts:
½ cup almond milk
1 teaspoon apple cider vinegar
1½ cups flour
2 teaspoons baking powder
¼ teaspoon baking soda
½ cup) sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅛ teaspoon salt
¾ cup apple cider
1 teaspoon vanilla extract
3 tablespoons canola oil

For the icing:
1 cup sugar
½ teaspoon ground cinnamon
1 tablespoon apple pie spice
4 tablespoons vegan butter, melted

What you are doing:

  1. For the donuts, place the milk and apple cider vinegar in a measuring cup and whisk together. Set aside for 5 minutes until the milk thickens.
  2. Preheat oven to 375 degrees and lightly grease donut baking pans. In a separate bowl, add flour, baking powder, baking soda, sugar, cinnamon, nutmeg, and salt. Stir in milk mixture, apple cider, vanilla and oil and mix until smooth.
  3. Place the batter in a piping bag and pipe the batter into the prepared indentations until about ¾ full.
  4. Bake for 10 minutes or until an inserted knife comes out clean. Remove from the oven and let cool for 5 minutes before removing from the pan and turning onto a wire rack to cool completely.
  5. For the frosting, whisk together the sugar, cinnamon, and apple pie spice in a bowl. In a separate bowl add melted butter.
  6. Once completely cool, dip (or lightly brush) each side of the donut in melted butter, then dip each side in the sugar mixture, making sure all sides are coated. Put the donut on a cooling rack. Repeat until all donuts are coated.
